Parmesan Tomato Zucchini Bake

Ingredients
  

3 medium zucchinis, sliced into 1/4-inch rounds

4 medium ripe tomatoes, sliced

1 cup grated Parmesan cheese

1 cup shredded mozzarella cheese

1/2 cup breadcrumbs (panko for extra crunch)

3 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

Fresh basil leaves, for garnish (optional)

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large bowl, combine the sliced zucchinis and tomatoes. Add minced garlic, oregano, basil, salt, and pepper. Drizzle with 2 tablespoons of olive oil and toss to coat evenly.

      In a separate bowl, mix together the grated Parmesan cheese, shredded mozzarella cheese, and breadcrumbs. Drizzle in the remaining olive oil to help it brown during baking.

        In a greased 9x13-inch baking dish, layer half of the zucchini-tomato mixture at the bottom.

          Sprinkle half of the cheese and breadcrumb mixture on top of the first layer.

            Add the remaining zucchini-tomato mixture on top of the cheese layer, followed by the rest of the cheese and breadcrumb mix.

              Cover the dish with aluminum foil and bake for 30 minutes. After that, remove the foil and bake for an additional 15-20 minutes, or until the top is golden brown and the vegetables are tender.

                Remove from the oven and let it cool for a few minutes before garnishing with fresh basil leaves if desired. Serve warm as a delicious side dish or a satisfying vegetarian entrée.
