For the Crust:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

1 teaspoon ground cinnamon

For the Peach Filling:

4 ripe peaches, peeled, pitted, and sliced

½ cup granulated sugar

1 tablespoon lemon juice

1 teaspoon vanilla extract

1 tablespoon cornstarch

For the Cheesecake Filling:

24 oz (3 packages) cream cheese, softened

1 cup granulated sugar

1 teaspoon vanilla extract

3 large eggs

1 cup sour cream

¼ cup all-purpose flour

For Topping:

½ cup chopped pecans (optional)

Whipped cream for serving (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 325°F (163°C).

    Make the Crust:

      - In a mixing bowl, combine the graham cracker crumbs, melted butter, granulated sugar, and ground cinnamon. Mix until well combined.

        - Press the mixture firmly into the bottom of a 9-inch springform pan to form an even crust. Bake for 10 minutes, then remove from oven and let it cool.

          Prepare the Peach Filling:

            - In a large saucepan, combine the sliced peaches, granulated sugar, lemon juice, and vanilla extract. Cook over medium heat for about 5-7 minutes until the peaches soften.

              - Slowly sprinkle the cornstarch over the mixture, stirring continuously until the mixture thickens slightly. Remove from heat and set aside to cool.

                Make the Cheesecake Filling:

                  - In a large mixing bowl, beat the softened cream cheese and granulated sugar with an electric mixer until smooth and creamy.

                    - Add the vanilla extract, then add the eggs one at a time, mixing on low speed after each addition until just combined.

                      - Mix in the sour cream and flour until smooth.

                        Assemble the Cheesecake:

                          - Pour half of the cheesecake batter into the cooled crust. Spread half of the peach filling over the batter. Pour the remaining cheesecake batter over the peach layer, followed by the rest of the peach filling.

                            Bake the Cheesecake:

                              - Wrap the bottom of the springform pan with aluminum foil to prevent water from seeping in. Place the springform pan in a larger baking dish and fill the baking dish with hot water until it reaches halfway up the sides of the cheesecake pan.

                                - Bake in the preheated oven for about 60-70 minutes or until the edges are set and the center is slightly jiggly.

                                  Cool and Chill:

                                    - Once baked, remove the cheesecake from the oven and remove it from the water bath. Let it cool at room temperature for about 1 hour, then refrigerate for at least 4 hours or overnight for best results.

                                      Serve:
