For the crust:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

For the cheesecake filling:

2 (8 oz) packages cream cheese, softened

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

½ cup sour cream

1 cup fresh peaches, peeled and diced (or canned peaches, drained)

2 tablespoons cornstarch

For the peach cream topping:

1 cup heavy whipping cream

¼ cup powdered sugar

1 teaspoon vanilla extract

½ cup fresh peaches, sliced for garnish

Prepare the crust: Preheat your oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Stir until the mixture resembles wet sand. Press this mixture firmly into the bottom of a greased 9x13 inch baking dish. Bake for 8-10 minutes, until lightly golden. Allow to cool slightly while preparing the filling.

    Make the cheesecake filling: In a large mixing bowl, beat the softened cream cheese until smooth and creamy. Gradually add the granulated sugar and mix until well combined. Add in the eggs, one at a time, mixing after each addition. Stir in vanilla extract and sour cream until incorporated.
