Peach Veggie Stir Fry

Ingredients
  

2 ripe peaches, pitted and sliced

1 red bell pepper, sliced into thin strips

1 cup broccoli florets

1 medium zucchini, sliced into half-moons

1 cup snap peas, trimmed

2 tablespoons olive oil

3 cloves garlic, minced

1 inch ginger, grated

3 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon honey or maple syrup

1 teaspoon sesame oil

1 teaspoon cornstarch mixed with 2 tablespoons water (optional for thickness)

Salt and pepper to taste

Sesame seeds for garnish

Fresh basil or cilantro for garnish (optional)

Instructions
 

Prepare the Veggies: Wash and slice the peaches, bell pepper, zucchini, and trim the snap peas. Cut the broccoli into small florets.

    Heat the Pan: In a large skillet or wok, heat the olive oil over medium-high heat until shimmering.

      Stir Fry Aromatics: Add the minced garlic and grated ginger to the pan. Stir-fry for about 30 seconds until fragrant, being careful not to burn.

        Add Veggies: Toss in the bell pepper, broccoli, zucchini, and snap peas. Stir-fry for 4-5 minutes until the vegetables are vibrant and slightly tender but still crisp.

          Incorporate Peaches: Gently stir in the sliced peaches, soy sauce, honey (or maple syrup), and sesame oil. Cook for another 2-3 minutes until the peaches are warmed through and slightly softened.

            Thicken Sauce (Optional): If you prefer a thicker sauce, add the cornstarch mixture to the stir-fry, stirring well until the sauce clings to the veggies.

              Season: Taste and season with salt and pepper as desired.

                Garnish & Serve: Remove from heat. Sprinkle sesame seeds on top and garnish with fresh basil or cilantro if using. Serve immediately over rice, quinoa, or noodles.
