1 cup creamy peanut butter

1 cup brown sugar, packed

1 large egg

1 teaspoon vanilla extract

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup chocolate chips (optional)

For the Ice Cream Filling:

2 cups vanilla ice cream (or your favorite flavor)

1/4 cup chopped peanuts (for added crunch)

Preheat the Oven: Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.

    Make the Cookie Dough: In a large mixing bowl, combine the creamy peanut butter and brown sugar. Mix until smooth. Add the egg, vanilla extract, baking soda, and salt. Stir until well combined. If desired, fold in the chocolate chips for added sweetness and texture.

      Shape the Cookies: Using a tablespoon or cookie scoop, drop dough onto the prepared baking sheets, spacing them about 2 inches apart. Flatten each ball slightly with the back of a fork, creating a crisscross pattern.

        Bake the Cookies: Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown. The centers may look slightly underbaked, but they will firm up as they cool. Remove from the oven and let them cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.

          Prepare the Ice Cream: While the cookies cool, let the vanilla ice cream sit at room temperature for about 5-10 minutes to soften slightly. In a bowl, mix the softened ice cream with the chopped peanuts for an added crunch.

            Assemble the Sandwiches: Once the cookies have cooled, take one cookie and scoop a generous amount of the peanut ice cream filling onto the flat side. Top with another cookie, flat side down, and gently press together. Repeat with the remaining cookies and ice cream.
