Ingredients

2 cups rolled oats

1/2 cup natural peanut butter (smooth or crunchy)

1/4 cup honey or maple syrup

1/4 cup brown sugar (packed)

1/2 cup milk (dairy or non-dairy)

1 teaspoon vanilla extract

1/2 teaspoon cinnamon

1/4 teaspoon salt

1/2 cup chocolate chips (optional)

1/4 cup chopped nuts or dried fruits (optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Grease a muffin tin or line it with muffin liners for easy removal later.

Mix Wet Ingredients: In a large mixing bowl, combine the peanut butter, honey (or maple syrup), milk, vanilla extract, and brown sugar. Mix well until you achieve a smooth, creamy texture.

Add Dry Ingredients: To the wet mixture, add the rolled oats, cinnamon, and salt. Stir until all the oats are evenly coated with the peanut butter mixture.

Optional Add-Ins: If you're using chocolate chips, nuts, or dried fruits, fold them into the mixture gently, ensuring they are evenly distributed.

Fill Muffin Tin: Spoon the oat mixture into the prepared muffin tin, filling each cup about 3/4 full. Press down gently with the back of a spoon to pack them in.

Bake: Place the muffin tin in the preheated oven and bake for 15-18 minutes, or until the tops are golden and firm to the touch.

Cool and Serve: Once done, remove the oat cups from the oven and let them cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely. Enjoy warm or store in an airtight container for later!
