Ingredients

1 lb flank steak (or sirloin), cut into 1-inch cubes

2 tablespoons olive oil

Salt and freshly cracked black pepper, to taste

3 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon fresh rosemary, finely chopped (or ½ teaspoon dried rosemary)

1 teaspoon fresh thyme, finely chopped (or ½ teaspoon dried thyme)

1 tablespoon Worcestershire sauce

Juice of 1/2 lemon

Fresh parsley, chopped (for garnish)

Instructions

Prep the Steak: Pat the steak cubes dry with paper towels to ensure good searing. Season generously with salt and pepper.

Searing the Steak: In a large skillet, heat the olive oil over medium-high heat until shimmering. Add the steak bites in a single layer, making sure not to overcrowd the pan. Sear for about 2-3 minutes on each side, until a nice brown crust forms and they reach your desired level of doneness (medium-rare is typically reached at 130°F).

Making the Garlic Butter Sauce: Once the steak bites are cooked, remove them from the skillet and set them aside on a plate. Lower the heat to medium and add the butter to the skillet. Allow it to melt and start to foam slightly.

Add Flavor: Stir in the minced garlic, chopped rosemary, thyme, and Worcestershire sauce. Cook for about 1 minute until the garlic is fragrant (do not let it burn).

Combine: Return the steak bites to the skillet, tossing them with the garlic butter mixture until evenly coated. Squeeze fresh lemon juice over the top for a zesty finish and continue to cook for another minute, allowing the flavors to meld.

Garnishing and Serving: Remove from heat, garnish with freshly chopped parsley, and serve immediately while hot.
