Pineapple Mint Agua Fresca

4 cups fresh pineapple, chopped

1/2 cup fresh mint leaves, plus extra for garnish

4 cups cold water

1/4 cup lime juice (freshly squeezed, about 2-3 limes)

1/4 cup agave syrup or honey (adjust to taste)

Pinch of salt

Ice cubes, for serving

Instructions
 

Blend the Pineapple: In a blender, combine the chopped pineapple and 2 cups of cold water. Blend on high until smooth and the pineapple is fully liquefied.

    Strain the Mixture: Using a fine-mesh sieve or cheesecloth, strain the blended pineapple juice into a large pitcher to remove the pulp. Press down with a spoon to extract as much juice as possible.

      Mix in Remaining Ingredients: Add the remaining 2 cups of cold water, freshly squeezed lime juice, agave syrup (or honey), and a pinch of salt to the pitcher. Stir well to combine all the ingredients.

        Add Mint: Gently tear the mint leaves and add them to the pitcher. Stir again to distribute the mint flavor throughout the agua fresca.

          Chill: Allow the mixture to chill in the refrigerator for at least 30 minutes to let the flavors meld.

            Serve: Fill glasses with ice cubes and pour the chilled pineapple mint agua fresca over the ice. Garnish with additional mint leaves and a slice of pineapple or lime if desired.
