Pumpkin Apple Harvest Chili

1 medium onion, diced

2 cloves garlic, minced

1 medium carrot, diced

1 bell pepper (red or yellow), diced

1 medium apple (Granny Smith or Honeycrisp), peeled and diced

2 cups pumpkin puree (canned or fresh)

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) kidney beans, drained and rinsed

1 can (14 oz) diced tomatoes, with juices

2 cups vegetable broth

2 tsp ground cumin

1 tbsp chili powder

1 tsp smoked paprika

1/2 tsp cinnamon

Salt and pepper, to taste

Olive oil, for sautéing

1 cup corn kernels (fresh, frozen, or canned)

Optional toppings: sour cream, shredded cheese, fresh cilantro, or sliced jalapeños

Instructions
 

Sauté Vegetables: In a large pot over medium heat, add a splash of olive oil. Once hot, add the diced onion and cook for about 3-4 minutes until translucent. Stir in the garlic, carrot, and bell pepper, and continue to sauté for another 5 minutes until the vegetables are softened.

    Add Apple and Spices: Stir in the diced apple, cumin, chili powder, smoked paprika, and cinnamon. Cook for 2-3 minutes, allowing the spices to bloom and the apple to caramelize slightly.

      Incorporate Pumpkin and Beans: Add the pumpkin puree, black beans, kidney beans, and diced tomatoes (with their juices) to the pot. Mix everything well to combine.

        Simmer: Pour in the vegetable broth and stir to distribute evenly. Season with salt and pepper to taste. Bring the chili to a gentle boil, then reduce the heat to low and let it simmer for 30-40 minutes, stirring occasionally.
