Ingredients

1 cup all-purpose flour

1/2 teaspoon baking soda

1 teaspoon baking powder

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1/2 cup granulated sugar

1/2 cup brown sugar, packed

1/2 cup vegetable oil

2 large eggs

1 cup pumpkin puree (not pumpkin pie filling)

1 teaspoon vanilla extract

1 cup semi-sweet chocolate chips

1/4 cup chopped pecans or walnuts (optional)

Whipped cream or cream cheese frosting for topping (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a cupcake pan with paper liners or grease the pan lightly.

Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger. Set aside.

Combine Sugars and Oil: In a large mixing bowl, combine granulated sugar, brown sugar, and vegetable oil. Mix until well blended.

Add Eggs and Pumpkin: Add the eggs one at a time, mixing well after each addition. Then, stir in the pumpkin puree and vanilla extract until fully combined.

Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Do not over-mix.

Fold in Chocolate Chips: Gently fold in the chocolate chips and nuts (if using) until evenly distributed throughout the batter.

Fill Liners: Scoop the batter into the prepared cupcake liners, filling each about two-thirds full.

Bake: Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.

Cool: Allow the cupcakes to cool in the pan for about 5 minutes, then transfer them to a wire rack to cool completely.

Frost (Optional): Once cooled, you can top the cupcakes with whipped cream or cream cheese frosting for an extra special treat.
