1 cup canned pure pumpkin (not pumpkin pie filling)

1/2 cup unsweetened applesauce

1/4 cup maple syrup

1/3 cup brown sugar, packed

1/4 cup almond butter (or any nut butter of your choice)

1 teaspoon vanilla extract

1 1/2 cups rolled oats

1 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon pumpkin pie spice

1/2 teaspoon salt

1/2 cup mini chocolate chips (plus more for topping)

1/2 cup chopped walnuts or pecans (optional)

Preheat the Oven: Preheat your oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper, allowing some overhang for easy removal later.

    Mix Wet Ingredients: In a large mixing bowl, combine the canned pumpkin, applesauce, maple syrup, brown sugar, almond butter, and vanilla extract. Whisk until the mixture is smooth and well combined.

      Blend Dry Ingredients: In another bowl, whisk together the rolled oats, baking powder, baking soda, pumpkin pie spice, and salt.

        Combine Mixtures: Gradually add the dry mixture into the wet ingredients, stirring gently until just combined. Be careful not to overmix.

          Add Chocolate Chips: Fold in the mini chocolate chips and nuts (if using) until evenly distributed.

            Bake the Bars: Pour the batter into the prepared baking pan and spread it evenly. Sprinkle a few extra chocolate chips on top if desired.

              Bake: Bake in the preheated oven for 25-30 minutes, or until the edges are lightly golden and a toothpick inserted into the center comes out clean.

                Cool and Cut: Allow the bars to cool in the pan for about 10 minutes, then use the parchment overhang to lift them out. Let them cool completely on a wire rack before cutting into squares.
