1 cup all-purpose flour

1 cup whole wheat flour

1 tablespoon baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

½ teaspoon salt

1 cup canned pumpkin puree (not pumpkin pie filling)

2 large eggs

½ cup milk (dairy or non-dairy)

¼ cup granulated sugar

½ cup brown sugar, packed

1 teaspoon vanilla extract

½ cup melted butter (or coconut oil for a dairy-free option)

Lollipop sticks or popsicle sticks

Maple syrup and powdered sugar (for serving)

Instructions
 

Preheat your waffle maker according to the manufacturer's instructions.

    In a large mixing bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Set aside.

      In another bowl, combine the pumpkin puree, eggs, milk, granulated sugar, brown sugar, vanilla extract, and melted butter. Whisk until all ingredients are well combined and smooth.

        Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined. Avoid over-mixing; a few lumps are okay.

          Lightly grease the waffle maker with cooking spray or additional melted butter. Pour enough batter into the waffle maker to cover the cooking surface, then close the lid and cook according to your waffle maker's instructions. They should be golden brown and cooked through, which usually takes about 3-5 minutes.

            Once cooked, carefully remove the waffles and cut them into quarters. Insert a lollipop stick into the middle of each piece, ensuring it's secure.

              Place the waffle pops on a plate or cooling rack and let them cool slightly.
