Pumpkin Crostini with Goat Cheese

Ingredients
  

1 medium pumpkin (or 2 cups pumpkin puree)

1 baguette, sliced into 1/2 inch pieces

4 oz goat cheese, softened

2 tbsp olive oil

2 tbsp honey

1 tsp fresh rosemary, finely chopped (or 1/2 tsp dried rosemary)

Salt and pepper, to taste

1/4 cup toasted pecans, chopped (optional)

Microgreens for garnish (optional)

Instructions
 

Prepare the Pumpkin:

    - If using a whole pumpkin, preheat your oven to 400°F (200°C). Cut the pumpkin in half and scoop out the seeds and stringy insides. Cut it into wedges and place them on a baking sheet. Drizzle with olive oil, sprinkle with salt and pepper, and roast for 25-30 minutes, or until tender.

      - If using canned pumpkin puree, skip to the next step.

        Make the Pumpkin Spread:

          - Once the pumpkin is roasted and cool enough to handle, scoop the flesh into a bowl and mash it with a fork. If using canned pumpkin, simply place the puree in a mixing bowl.

            - Mix in honey, rosemary, salt, and pepper to taste. Set aside.

              Prepare the Baguette:

                - While the pumpkin is roasting, reduce the oven temperature to 375°F (190°C).

                  - Arrange the baguette slices on another baking sheet and brush both sides with olive oil. Bake for about 8-10 minutes, flipping halfway, until the slices are golden and crispy.

                    Assemble the Crostini:

                      - Once the crostini are out of the oven, let them cool slightly. Spread a generous layer of the pumpkin mixture on each slice.

                        - Top with a dollop of softened goat cheese and sprinkle with chopped pecans if using.

                          Finish and Serve:

                            - Drizzle with a touch of honey for added sweetness and garnish with microgreens.

                              - Serve immediately while the crostini are still warm.
