2 cups old-fashioned rolled oats

1 cup mixed nuts (almonds, pecans, walnuts), roughly chopped

1/2 cup pumpkin seeds (pepitas)

1/2 cup unsweetened shredded coconut

1/4 cup brown sugar or maple syrup

1/2 cup pumpkin puree

1/3 cup honey or agave syrup

1 tsp vanilla extract

1 tsp pumpkin spice (or a mix of cinnamon, nutmeg, and ginger)

1/4 tsp salt

Optional: 1/2 cup dried cranberries or chocolate chips for added sweetness

Preheat the Oven: Preheat your oven to 325°F (165°C) and line a large baking sheet with parchment paper for easy cleanup.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, chopped nuts, pumpkin seeds, shredded coconut, brown sugar, pumpkin spice, and salt. Stir well to ensure all dry ingredients are evenly mixed.

      Combine Wet Ingredients: In a separate bowl, whisk together the pumpkin puree, honey (or agave), and vanilla extract until smooth. This will create a moist and flavorful binding agent for your granola.

        Combine Mixtures: Pour the wet mixture over the dry ingredients and mix thoroughly, ensuring that all the dry ingredients are coated evenly. The mixture should be clumpy.

          Shape the Granola: Spread the mixture evenly onto the prepared baking sheet. Press it down firmly with the back of a spatula to form a compact layer. This helps to create clusters once baked.

            Bake: Place the baking sheet in the preheated oven and bake for 25-30 minutes, stirring halfway through for even baking. Keep an eye on it to prevent burning; the granola should be golden brown and fragrant.

              Cool and Break: Once baked, remove from the oven and let it cool completely on the baking sheet. As it cools, it will harden and form clusters. Once cooled, break apart the granola into desired cluster sizes.

                Add Extras: If using, stir in the dried cranberries or chocolate chips to add a touch of sweetness and texture.

                  Store: Transfer the granola clusters to an airtight container and store at room temperature for up to two weeks.
