Pumpkin Pancake Sandwich Bites

For the Pancakes:

1 cup all-purpose flour

1/2 cup pumpkin puree

1 tablespoon sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon salt

1 cup buttermilk

1 large egg

2 tablespoons melted butter

Cooking spray or additional butter for cooking

For the Cream Cheese Filling:

4 ounces cream cheese, softened

1/4 cup powdered sugar

1/2 teaspoon vanilla extract

Zest of 1 orange (optional)

1 tablespoon milk (to adjust consistency)

For Topping:

Maple syrup

Whipped cream (optional)

Pumpkin spice (optional)

Instructions
 

Prepare the Pancake Batter:

    In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt. In another bowl, combine the pumpkin puree, buttermilk, egg, and melted butter until well mixed. Gradually pour the wet ingredients into the dry ingredients, stirring just until combined (a few lumps are okay).

      Cook the Pancakes:

        Preheat a non-stick skillet or griddle over medium heat and lightly grease with cooking spray or butter. Pour about 1/4 cup of batter onto the skillet for each pancake. Cook for 2-3 minutes on one side, until bubbles form on the surface. Flip and cook for another 1-2 minutes until golden brown. Repeat with remaining batter. You should have about 8 pancakes.

          Make the Cream Cheese Filling:

            In a medium bowl, beat the softened cream cheese until smooth. Add in the powdered sugar, vanilla extract, and orange zest (if using). Mix until fully combined. If the mixture is too thick, add milk one tablespoon at a time until you reach a spreadable consistency.

              Assemble the Sandwich Bites:

                Once the pancakes have cooled slightly, spread a generous layer of the cream cheese filling on one pancake and top it with another pancake to create a sandwich. Repeat until all pancakes are used.

                  Serve:

                    Cut each pancake sandwich into quarters to create bite-sized pieces. Arrange on a serving platter and drizzle with maple syrup. For an extra touch, add a dollop of whipped cream on the side and sprinkle with pumpkin spice if desired.
