2 tablespoons brown sugar

2 large eggs

1 cup milk

½ cup vegetable oil (or melted butter)

Maple syrup, for drizzling

Cream cheese frosting (store-bought or homemade) for filling

Preheat the Waffle Maker: Start by preheating your waffle maker according to the manufacturer's instructions.

    Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, brown sugar, baking powder, cinnamon, nutmeg, ginger, and salt until well combined.

      Combine Wet Ingredients: In a separate bowl, whisk together the pumpkin puree, eggs, milk, and vegetable oil until smooth and well blended.

        Combine Mixtures: Pour the wet ingredients into the bowl with the dry ingredients. Stir gently until just combined; be careful not to overmix. The batter should be slightly lumpy.

          Cook the Waffles: Lightly grease the waffle maker with cooking spray or brush with melted butter. Pour enough batter into the waffle maker to cover the waffle grid and close the lid. Cook until the waffles are golden brown and crispy (this may take about 4-5 minutes depending on your waffle maker). Repeat until all batter is used.
