1 cup Arborio rice

4 cups low-sodium vegetable broth (heated)

1 cup cremini mushrooms, sliced

1 small onion, finely chopped

2 garlic cloves, minced

1/2 cup dry white wine (optional)

1/2 cup grated Parmesan cheese

1/2 cup heavy cream

2 tablespoons butter

2 tablespoons olive oil

1 teaspoon dried thyme

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté the Aromatics: In a large, heavy-bottomed pot, heat the olive oil and 1 tablespoon of butter over medium heat. Add the chopped onion and minced garlic, cooking until the onion is translucent, about 3-4 minutes.

    Cook the Mushrooms: Add the sliced mushrooms to the pot and sauté until they are softened and golden, around 5-7 minutes. Sprinkle in the dried thyme, and season with salt and pepper to taste.

      Toast the Rice: Stir in the Arborio rice, allowing it to toast for about 2 minutes. The rice will become slightly translucent around the edges, which enhances its flavor.

        Deglaze with Wine: If using, pour in the white wine and stir continuously until the liquid is almost entirely absorbed by the rice.

          Add the Broth: Gradually ladle in the warmed vegetable broth, about 1 cup at a time. Stir frequently, allowing the liquid to absorb before adding the next cup. This process will take about 20-25 minutes.

            Stir in Cream and Cheese: Once the rice is creamy and al dente, remove the pot from heat. Stir in the remaining tablespoon of butter, heavy cream, and the grated Parmesan cheese until well combined and creamy. Adjust seasoning with salt and pepper as desired.
