8 oz (225g) penne pasta

1 tablespoon olive oil

3 cloves garlic, minced

1 can (14 oz) diced tomatoes (with juices)

½ teaspoon red pepper flakes (adjust to taste)

½ teaspoon sugar

1 cup heavy cream or coconut cream for a vegan option

1 cup fresh basil leaves, roughly chopped

Salt and pepper, to taste

½ cup grated Parmesan cheese (or nutritional yeast for a vegan option)

Extra basil leaves for garnish

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the penne pasta according to package instructions until al dente. Drain, reserving ½ cup of pasta water, and set aside.

    Sauté Aromatics: In a large skillet over medium heat, heat the olive oil. Add the minced garlic and sauté for about 1-2 minutes until fragrant, being careful not to burn it.

      Add Tomatoes & Spice: Stir in the diced tomatoes (with their juices), red pepper flakes, and sugar. Allow the mixture to simmer for about 5 minutes, letting the flavors meld together.

        Create the Creamy Base: Reduce the heat to low and add the heavy cream (or coconut cream), stirring well to combine. Cook for an additional 3-4 minutes until the sauce is warmed through and slightly thickened.

          Mix in Pasta: Add the cooked penne pasta to the skillet, tossing to coat the pasta in the creamy tomato sauce. If the sauce is too thick, gradually stir in the reserved pasta water until desired consistency is achieved.

            Season & Add Basil: Season with salt and pepper to taste. Stir in the chopped basil and grated Parmesan cheese (or nutritional yeast). Mix well until everything is evenly combined.

              Serve: Plate the creamy tomato basil pasta and garnish with extra fresh basil leaves and a sprinkle of more Parmesan (or nutritional yeast) if desired.
