Quick and Easy Cheesy Vegetable Quesadillas

4 large flour tortillas

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1 cup mixed vegetables (bell peppers, onions, spinach, and corn)

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon cumin

Salt and pepper to taste

Salsa or sour cream for serving (optional)

Prepare the Vegetables: In a large skillet over medium heat, add olive oil. Once hot, toss in the mixed vegetables. Sauté for about 5 minutes until the vegetables are softened. Add garlic powder, cumin, salt, and pepper, and stir well. Cook for an additional minute until fragrant, then remove from heat.

    Assemble Quesadillas: Lay a tortilla flat on a clean surface or cutting board. Sprinkle ¼ cup of cheddar cheese followed by ¼ cup of mozzarella on half of the tortilla. Top the cheese with a generous scoop of the sautéed vegetable mixture. Fold the other half of the tortilla over to create a half-moon shape.

      Cook the Quesadillas: Wipe the skillet clean and return it to medium heat. Place the folded quesadilla in the skillet. Cook for about 3-4 minutes on one side until golden brown and crispy. Carefully flip the quesadilla and cook for another 3-4 minutes on the other side. Repeat with remaining tortillas.

        Serve and Enjoy: Once cooked, remove the quesadillas from the skillet and allow them to cool slightly. Cut into wedges and serve with salsa or sour cream on the side for dipping.
