4 large bell peppers (any color)

1 pound ground turkey or beef

1 medium onion, diced

2 cloves garlic, minced

1 cup cooked rice (white, brown, or cauliflower rice)

1 can (15 oz) black beans, rinsed and drained

1 cup corn (frozen or canned)

1 packet taco seasoning (or homemade with chili powder, cumin, garlic powder, and paprika)

1 cup salsa

1 cup shredded cheese (cheddar or Mexican blend)

Fresh cilantro or parsley for garnish

Salt and pepper to taste

Olive oil for cooking

Prepare the Bell Peppers: Preheat your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes. Lightly brush the outside with olive oil and place them in a baking dish, cut side up.

    Cook the Base Filling: In a large skillet over medium heat, add a tablespoon of olive oil. Sauté the diced onion until translucent (about 3-4 minutes), then add minced garlic and cook for an additional minute until fragrant.
