2 cups cooked shredded chicken (rotisserie chicken works well)

1 cup BBQ sauce (your favorite brand)

1 cup shredded cheese (cheddar, mozzarella, or a blend)

4 large flour tortillas

1/2 cup corn (canned or frozen)

1/2 cup diced red onion

1/4 cup chopped fresh cilantro (optional)

Cooking spray or a bit of olive oil

Instructions
 

Prep the Chicken: In a medium mixing bowl, combine the cooked shredded chicken with BBQ sauce, mixing until the chicken is evenly coated. Set aside.

    Assemble Quesadillas: Heat a large skillet over medium heat and lightly spray with cooking spray or add a tablespoon of olive oil. Place one tortilla in the skillet. On one half of the tortilla, layer 1/4 of the BBQ chicken mixture, sprinkle 1/4 cup of corn, a few tablespoons of diced red onion, and a generous amount of cheese.

      Fold and Cook: Carefully fold the tortilla over to create a half-moon shape. Cook for about 3-4 minutes, or until the bottom is golden and crispy. Flip the quesadilla and cook for another 3-4 minutes on the other side until the cheese has melted and the tortilla is evenly browned.

        Repeat: Remove the cooked quesadilla from the skillet and keep warm while you repeat the process with the remaining tortillas and filling.

          Serve: Once all quesadillas are cooked, slice them into wedges. Serve hot, garnished with fresh cilantro. You can also add extra BBQ sauce for dipping or a side of sour cream!
