4 salmon fillets (6 ounces each)

3 tablespoons olive oil

4 cloves garlic, minced

Zest and juice of 1 large lemon

1 teaspoon Dijon mustard

Salt and pepper, to taste

5 cups fresh spinach

1/4 teaspoon red pepper flakes (optional)

1 tablespoon fresh parsley, chopped (for garnish)

Marinate the Salmon: In a small bowl, whisk together 2 tablespoons of olive oil, minced garlic, lemon zest, lemon juice, Dijon mustard, salt, and pepper. Place the salmon fillets in a shallow dish and pour the marinade over them, making sure they are well-coated. Let them marinate for 15-20 minutes.

    Cook the Salmon: Heat a large skillet over medium-high heat and add the remaining tablespoon of olive oil. Once hot, add the marinated salmon fillets, skin-side down. Cook for about 4-5 minutes on each side, depending on the thickness of the fillets, until the salmon is cooked through and flakes easily with a fork.
