1 lb ground beef

1 can (15 oz) black beans, drained and rinsed

1 cup enchilada sauce (store-bought or homemade)

1 cup corn kernels (fresh, frozen, or canned)

1 tsp cumin

1 tsp chili powder

1/2 tsp garlic powder

1/2 tsp onion powder

Salt and pepper to taste

8 small corn or flour tortillas

1 cup shredded cheese (cheddar or Mexican blend)

1/4 cup fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Cook the Beef: In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it up with a spatula until fully cooked (about 5-7 minutes). Drain excess fat if necessary.

    Add Beans and Corn: Stir in the black beans, corn, cumin, chili powder, garlic powder, onion powder, salt, and pepper. Cook for an additional 3-4 minutes until heated through.

      Combine with Enchilada Sauce: Pour in 1/2 cup of the enchilada sauce and stir until the beef mixture is well coated. Remove the skillet from heat.

        Assemble the Enchiladas: In a separate pan, lightly toast the tortillas one at a time over medium heat for about 30 seconds on each side until pliable. Lay each tortilla flat, and spoon a generous amount of the beef and bean mixture down the center. Roll each tortilla tightly and place seam-side down in the skillet.

          Top with Sauce and Cheese: Once all tortillas are arranged in the skillet, pour the remaining enchilada sauce over the top and sprinkle with shredded cheese.

            Melt the Cheese: Cover the skillet and cook on low heat for about 5-7 minutes until the cheese is melted and bubbly.

              Garnish and Serve: Remove from heat, garnish with fresh cilantro, and serve warm with lime wedges on the side.
