Quick Spinach and Ricotta Stuffed Shells

12 large jumbo pasta shells

1 cup ricotta cheese

1 cup fresh spinach, chopped (or 1/2 cup frozen spinach, thawed and drained)

1/2 cup mozzarella cheese, shredded

1/4 cup grated Parmesan cheese

1 egg, beaten

1 teaspoon garlic powder

1 teaspoon Italian seasoning

Salt and pepper, to taste

2 cups marinara sauce

Fresh basil leaves, for garnish (optional)

Cook the Pasta: Bring a large pot of salted water to a boil. Add the jumbo pasta shells and cook according to the package instructions until just al dente. Drain and set aside to cool slightly.

    Mix the Filling: In a large bowl, combine the ricotta cheese, chopped spinach, mozzarella cheese, Parmesan cheese, beaten egg, garlic powder, Italian seasoning, salt, and pepper. Mix until well combined.

      Preheat the Oven: Preheat your oven to 375°F (190°C).

        Stuff the Shells: Carefully take each cooked shell and fill it generously with the cheese and spinach mixture using a spoon or piping bag. Place the filled shells seam-side up in a baking dish.

          Add Sauce: Spread 1 cup of marinara sauce over the stuffed shells, ensuring they are covered evenly. Reserve the remaining sauce to serve on the side.

            Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Then, remove the foil and bake for an additional 10 minutes, until the cheese is melted and bubbly.

              Garnish and Serve: Remove from the oven and let it cool for a few minutes. Garnish with fresh basil leaves if desired. Serve with the remaining marinara sauce on the side.
