Ingredients
  

1 cup quinoa

2 cups vegetable broth (or water)

1 cup cherry tomatoes, halved

1 bell pepper (any color), diced

1 medium cucumber, diced

1 cup corn kernels (fresh or frozen)

1 avocado, diced

1 cup black beans, rinsed and drained

½ cup red onion, finely chopped

1 tablespoon olive oil

Juice of 1 lime

1 teaspoon cumin

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Instructions
 

Rinse the Quinoa: Start by rinsing the quinoa under cold water in a fine-mesh sieve to remove any bitterness. Drain well.

    Cook the Quinoa: In a medium saucepan, combine the rinsed quinoa and vegetable broth (or water). Bring to a boil over medium-high heat. Once boiling, reduce the heat to low, cover, and let it simmer for about 15 minutes or until all the liquid is absorbed. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork.

      Prepare the Veggies: While the quinoa is cooking, prepare your vegetables. Dice the bell pepper, cucumber, and avocado, and halve the cherry tomatoes. If you’re using frozen corn, microwave it according to package instructions until heated through.

        Mix the Dressing: In a small bowl, whisk together the olive oil, lime juice, cumin, salt, and pepper until well combined.

          Assemble the Bowls: In a large mixing bowl, combine the cooked quinoa, black beans, red onion, cherry tomatoes, bell pepper, corn, and cucumber. Drizzle the dressing over the mixture and toss gently to combine.
