For the crust:

1 ½ cups graham cracker crumbs

⅓ cup granulated sugar

½ cup unsalted butter, melted

For the cheesecake filling:

16 oz cream cheese, softened

½ cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 cup peanut butter

1 cup whipped topping (like Cool Whip)

For the topping:

1 cup semi-sweet chocolate chips

½ cup chopped Reese’s Peanut Butter Cups

¼ cup heavy cream

Prepare the crust: Preheat the oven to 325°F (160°C). In a mixing bowl, combine graham cracker crumbs and granulated sugar. Stir in melted butter until the mixture resembles wet sand. Press the mixture firmly into the bottom of a 9x13-inch baking dish to form an even layer. Bake for 10 minutes, then remove from the oven and let cool.

    Make the cheesecake filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy (about 2-3 minutes). Gradually add in ½ cup granulated sugar, and mix until combined. Add the eggs one at a time, mixing well after each addition. Then, mix in vanilla extract and peanut butter until fully incorporated. Gently fold in the whipped topping until the mixture is well combined and fluffy.

      Assemble the cheesecake bars: Pour the cheesecake filling over the cooled crust, spreading it evenly. Add chopped Reese’s Peanut Butter Cups on top of the cheesecake filling, gently pressing them into the mixture.

        Bake: Place the baking dish in the oven and bake for 30-35 minutes, or until the edges are set, and the center has a slight jiggle. Remove from the oven and allow to cool at room temperature for about 1 hour, then refrigerate for at least 4 hours, or overnight, to set properly.

          Prepare the chocolate topping: In a small saucepan over low heat, combine chocolate chips and heavy cream. Stir continuously until the chocolate is completely melted and smooth. Remove from heat and let cool slightly.

            Drizzle the chocolate: Once the cheesecake bars are completely chilled, pour the melted chocolate over the top and spread it gently with a spatula. Sprinkle remaining chopped Reese’s cups on top for garnish.
