Roasted Corn and Jalapeño Dip

4 ears of fresh corn, husked

2 medium jalapeños, halved and seeded

1 tablespoon olive oil

Salt and pepper, to taste

8 oz cream cheese, softened

1 cup sour cream

1 cup shredded sharp cheddar cheese

1/2 cup chopped green onions (plus extra for garnish)

1 teaspoon garlic powder

Juice of 1 lime

Fresh cilantro, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Roast Corn and Jalapeños: Place the husked corn and jalapeño halves on a baking sheet. Drizzle with olive oil and season with salt and pepper. Roast in the preheated oven for about 20-25 minutes, or until the corn is golden and the jalapeños are nicely charred, turning halfway through for even cooking.

      Cut Corn Off the Cob: Once roasted, let them cool slightly before carefully cutting the corn kernels off the cobs and chopping the jalapeños into smaller pieces.

        Mix Ingredients: In a large mixing bowl, combine the cream cheese, sour cream, shredded cheddar cheese, and chopped green onions. Stir until well combined.

          Add Corn and Jalapeños: Fold in the roasted corn kernels and chopped jalapeños into the creamy mixture. Add garlic powder, lime juice, and additional salt and pepper to taste.

            Transfer to Baking Dish: Spread the dip mixture into a greased 9-inch pie dish or an oven-safe skillet.

              Bake the Dip: Bake in the oven for 20-25 minutes, or until the dip is bubbly and golden on top.

                Garnish and Serve: Remove from the oven, and allow to cool slightly. Garnish with extra green onions and chopped cilantro, if desired. Serve warm with tortilla chips, pita chips, or fresh vegetables.
