Roasted Corn Avocado Salsa

4 ears of fresh corn, husked

2 ripe avocados, diced

1 medium red onion, finely chopped

2 medium tomatoes, diced

1 jalapeño, seeds removed, finely chopped (optional for heat)

1/4 cup fresh cilantro, chopped

Juice of 2 limes

2 tablespoons olive oil

Salt and pepper, to taste

Roast the Corn: Preheat your grill or a grill pan over medium-high heat. Place the husked corn directly on the grill. Rotate every 2-3 minutes until all sides are charred and slightly caramelized, about 10-12 minutes total. Remove from the grill and let it cool. Once cool enough to handle, slice the kernels off the cob into a large mixing bowl.

    Prep the Ingredients: While the corn is cooling, dice the avocados, chop the red onion and tomatoes, and mince the jalapeño (if using). Add all these ingredients to the bowl with the grilled corn.

      Mix the Salsa: Add the chopped cilantro to the bowl. In a small bowl, whisk together the lime juice, olive oil, salt, and pepper. Pour this dressing over the corn and avocado mixture.

        Combine: Gently stir the mixture until everything is combined, taking care not to mash the avocados.

          Adjust Seasoning: Taste and adjust the seasoning with more salt, pepper, or lime juice as needed.

            Chill (Optional): If time allows, cover the salsa and let it chill in the refrigerator for at least 30 minutes to allow the flavors to meld together.

              Serve: Serve chilled or at room temperature with tortilla chips, or as a topping for grilled fish or chicken.
