2 heads of garlic

2 tablespoons olive oil

1 medium onion, diced

2 medium carrots, diced

2 celery stalks, diced

1 teaspoon fresh thyme (or ½ teaspoon dried)

4 cups vegetable broth

2 medium potatoes, peeled and diced

1 cup heavy cream (or coconut milk for a vegan option)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Crusty bread (for serving)

Instructions
 

Roast the Garlic: Preheat your oven to 400°F (200°C). Cut the tops off the garlic heads to expose the cloves, drizzle with 1 tablespoon of olive oil, and wrap each head in aluminum foil. Roast in the oven for 30–35 minutes until soft and caramelized. Let it cool slightly before squeezing the cloves out into a bowl.

    Sauté the Veggies: In a large pot, heat the remaining tablespoon of olive oil over medium heat. Add the diced onion, carrots, and celery, and sauté for about 5–7 minutes or until they start to soften. Stir in the fresh thyme.

      Simmer the Soup: Add the roasted garlic cloves to the pot along with the vegetable broth and diced potatoes. Bring the mixture to a boil, then reduce the heat and let it simmer for about 20 minutes, or until the potatoes are tender.

        Blend Until Smooth: Using an immersion blender, carefully puree the soup directly in the pot until smooth and creamy. Alternatively, transfer the soup in batches to a blender, blending until smooth.

          Add Cream and Season: Return the blended soup to the pot. Stir in the heavy cream (or coconut milk) and season with salt and pepper to taste. Heat the soup over low heat until warmed through, but do not boil.
