Ingredients

1/4 cup fresh orange juice

2 tablespoons fresh lemon juice

2 tablespoons extra virgin olive oil

1 tablespoon honey

2 cloves garlic, minced

1 tablespoon fresh dill, chopped

1 tablespoon fresh parsley, chopped

1 teaspoon Dijon mustard

Salt and pepper to taste

1 pound salmon fillet

Instructions

Prepare the Marinade: In a medium bowl, whisk together the orange juice, lemon juice, olive oil, honey, minced garlic, dill, parsley, and Dijon mustard until well combined.

Season: Add salt and pepper to taste. Adjust the sweetness or acidity by adding more honey or lemon juice, depending on your preference.

Marinate the Salmon: Place the salmon fillet in a shallow dish or a resealable plastic bag, and pour the marinade over it. Ensure that the salmon is well-coated. For best results, cover and refrigerate for at least 30 minutes and up to 2 hours.

Preheat the Grill or Oven: If grilling, preheat the grill to medium-high heat. If baking, preheat the oven to 400°F (200°C).

Cook the Salmon: After marinating, remove the salmon from the marinade and discard the leftover marinade. Grill the salmon for about 4-6 minutes on each side, or bake it in the preheated oven on a lined baking sheet for 12-15 minutes, until the fish flakes easily with a fork.

Serve: Let the salmon rest for a few minutes before serving. Optionally, garnish with additional fresh herbs or slices of citrus for presentation.
