Sardine Toast with Herb Whip

For the Sardine Toast:

1 can (4-5 ounces) of sardines in olive oil

2 slices of rustic sourdough bread

1 tablespoon of lemon juice

1 tablespoon of capers, rinsed and chopped

Salt and freshly ground black pepper, to taste

A handful of arugula or mixed greens, for garnish

For the Herb Whip:

1/2 cup heavy cream

1/4 cup fresh parsley, finely chopped

2 tablespoons fresh chives, finely chopped

1 tablespoon fresh dill, finely chopped

Zest of 1 lemon

Salt and pepper, to taste

Instructions
 

Prepare the Herb Whip:

    - In a mixing bowl, pour in the heavy cream. Using a handheld mixer or whisk, whip the cream until it reaches soft peaks.

      - Gently fold in the chopped parsley, chives, dill, and lemon zest. Season with salt and pepper to taste.

        - Transfer the herb whip to a small serving bowl and set aside in the refrigerator to chill.

          Prepare the Sardine Toast:
