Sausage and Cheddar Egg Muffins

1 pound (450g) breakfast sausage, casings removed

1 cup (100g) shredded sharp cheddar cheese

6 large eggs

1/2 cup (120ml) milk (whole or 2%)

1/4 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

1 cup (150g) diced bell peppers (red, green, or a mix for color)

1/4 cup (15g) chopped fresh chives (optional)

Non-stick cooking spray or muffin liners

Instructions
 

Preheat the Oven: Start by preheating your oven to 350°F (175°C) and grease a 12-cup muffin tin with non-stick cooking spray or line with muffin liners.

    Cook the Sausage: In a large skillet over medium heat, crumble in the breakfast sausage. Cook, stirring often, until browned and cooked through, about 5-7 minutes. Drain any excess fat and set aside to cool slightly.

      Whisk the Eggs: In a large mixing bowl, crack the six eggs. Add the milk, salt, black pepper, garlic powder, and onion powder. Whisk together until well combined and frothy.

        Combine Ingredients: Stir in the cooked sausage, shredded cheddar cheese, diced bell peppers, and chives if using. Mix until everything is evenly distributed.

          Fill the Muffin Tin: Spoon the egg mixture evenly into each muffin cup, filling them about 3/4 full. Make sure to distribute the sausage and veggies evenly.

            Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until the tops are golden and a toothpick inserted into the center comes out clean.
