Ingredients

16 oz (450g) mixed mushrooms (cremini, shiitake, and button), cleaned and sliced

3 cups fresh spinach, washed and roughly chopped

3 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon dried thyme

1 tablespoon balsamic vinegar (optional)

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Ingredients: Clean and slice the mushrooms and wash and chop the spinach. Mince the garlic.

Heat the Oil: In a large skillet, heat the olive oil over medium heat.

Sauté the Mushrooms: Add the sliced mushrooms to the skillet in a single layer. Let them cook undisturbed for about 5 minutes until they start to brown. Stir occasionally to ensure even cooking.

Add Garlic and Seasoning: Once the mushrooms are browned, add the minced garlic, salt, black pepper, and dried thyme. Sauté for an additional 2-3 minutes until the garlic becomes fragrant.

Incorporate Spinach: Add the chopped spinach to the skillet. Cook for about 2-3 minutes, stirring frequently until the spinach is wilted and tender.

Finish with Balsamic: If using, add the balsamic vinegar and stir to combine. Let it cook for another minute to deepen the flavors.

Serve: Remove from heat and transfer the sautéed mixture to a serving dish. Garnish with fresh chopped parsley before serving.
