1 pre-made pie crust (store-bought or homemade)

6 large eggs

1 cup whole milk

1 cup fresh spinach, chopped

1 cup feta cheese, crumbled

1/2 cup sharp cheddar cheese, shredded

1/2 cup cherry tomatoes, halved

1 small onion, finely diced

2 cloves garlic, minced

1 tsp dried oregano

1/2 tsp salt

1/4 tsp black pepper

1 tbsp olive oil

Fresh herbs (parsley or basil) for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Crust: Place the pie crust into a 9-inch pie dish and fit it into the dish, pressing it gently against the sides. Poke a few holes in the bottom with a fork to prevent bubbling. Pre-bake the crust for 10 minutes, then remove from the oven and set aside.

      Cook the Vegetables: In a skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent. Add minced garlic and cook for another 1 minute until fragrant. Stir in the chopped spinach and cook until wilted, about 2 minutes. Remove from heat.

        Prepare the Egg Mixture: In a large mixing bowl, whisk together the eggs and whole milk until well combined. Add the oregano, salt, and black pepper. Mix well.

          Combine Ingredients: Stir in the sautéed vegetables, crumbled feta cheese, shredded cheddar cheese, and cherry tomatoes into the egg mixture until evenly distributed.

            Fill the Crust: Pour the egg and vegetable mixture into the pre-baked pie crust, spreading it evenly.

              Bake the Quiche: Bake in the preheated oven for 35-40 minutes, or until the quiche is set and lightly golden on top. You can check if it’s done by inserting a toothpick into the center; it should come out clean.

                Cool and Serve: Once baked, remove the quiche from the oven and let it cool for about 10 minutes. Slice into wedges and garnish with fresh herbs if desired.
