Ingredients

2 cups all-purpose flour

1 tablespoon baking powder

1 teaspoon salt

1/2 teaspoon black pepper

1/2 cup unsalted butter, cold and cubed

1 cup shredded sharp cheddar cheese

1 cup diced cooked ham (preferably smoked)

3/4 cup buttermilk

1 tablespoon fresh chives, chopped (optional for garnish)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or a silicone baking mat.

Mix Dry Ingredients: In a large bowl, whisk together the flour, baking powder, salt, and black pepper until well combined.

Cut in the Butter: Add the cubed cold butter to the dry ingredients. Using a pastry cutter or your fingers, cut the butter into the flour mixture until it resembles coarse crumbs.

Add Cheese and Ham: Gently fold in the shredded cheddar cheese and diced ham until evenly distributed.

Incorporate Buttermilk: Create a well in the center of the dry mixture and pour in the buttermilk. Stir with a wooden spoon until just combined. Be careful not to overmix; the dough should be slightly sticky.

Shape the Biscuits: Turn the dough out onto a floured surface. With floured hands, gently pat the dough into a rectangle about 1-inch thick. Fold the dough in half three times to create layers, then pat it down to about 1-inch thickness again.

Cut the Biscuits: Using a floured biscuit cutter or a drinking glass, cut out biscuits from the dough. Place them on the prepared baking sheet, spacing them about 1 inch apart.

Bake the Biscuits: Bake in the preheated oven for 12-15 minutes, or until the tops are golden brown and the biscuits have risen nicely.

Serve and Garnish: Remove the biscuits from the oven and let them cool for a few minutes. Optionally, sprinkle with chopped chives for a fresh touch before serving. Enjoy warm with butter or on their own!
