1 cup ricotta cheese

1 large egg

¼ cup grated Parmesan cheese

3 tablespoons fresh chives, finely chopped

2 tablespoons fresh parsley, finely chopped

1 tablespoon fresh thyme leaves

1 tablespoon lemon zest

Black pepper, to taste

1 egg, beaten (for egg wash)

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Mix Dry Ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, and salt.

      Cut in Butter: Add the cubed cold butter to the flour mixture. Using a pastry cutter or your fingertips, cut in the butter until the mixture resembles coarse crumbs.

        Combine Wet Ingredients: In a separate bowl, whisk together the ricotta cheese, large egg, and honey (if using) until well combined.

          Add Herbs and Cheese: Stir in the grated Parmesan, chopped chives, parsley, thyme, and lemon zest to the ricotta mixture.

            Combine Mixtures: Pour the ricotta mixture into the flour mixture. Using a spatula or your hands, gently combine until just mixed. It's important not to overwork the dough; it should be slightly sticky but cohesive.
