Savory Turkey and Spinach Stuffed Peppers

4 large bell peppers (any color)

1 lb ground turkey

2 cups fresh spinach, chopped

1 cup cooked quinoa (or rice)

1 small onion, diced

2 cloves garlic, minced

1 cup diced tomatoes (canned or fresh)

1 tsp Italian seasoning

1/2 tsp paprika

1/2 tsp salt

1/4 tsp black pepper

1 cup shredded mozzarella cheese

1 tbsp olive oil

Fresh basil or parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Peppers: Slice the tops off the bell peppers and remove the seeds and membranes. Drizzle a baking dish with a little olive oil to prevent sticking, and place the peppers upright in the dish.

      Cook the Filling: In a large skillet, heat the olive oil over medium heat. Add the diced onion and garlic, sautéing until the onion becomes translucent, about 3-4 minutes.

        Add Ground Turkey: Increase the heat to medium-high and add the ground turkey to the skillet. Cook until browned and fully cooked through, breaking it apart with a spatula as it cooks, about 5-7 minutes.

          Mix in Vegetables: Stir in the chopped spinach, diced tomatoes, cooked quinoa, Italian seasoning, paprika, salt, and pepper. Cook until the spinach is wilted and everything is heated through, about 3-4 minutes. Remove from heat.

            Stuff the Peppers: Spoon the turkey and spinach mixture generously into each hollow bell pepper, mounding it on top.

              Top with Cheese: Sprinkle the shredded mozzarella cheese evenly over the stuffed peppers.

                Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.

                  Serve: Once done, remove from oven and let cool for a few minutes. Garnish with fresh basil or parsley if desired before serving.
