Savory Turkey and Sweet Potato Bowls

1 lb ground turkey

2 medium sweet potatoes, peeled and diced

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon cumin

½ teaspoon salt

¼ teaspoon black pepper

1 cup black beans, rinsed and drained

1 cup corn (fresh or frozen)

1 avocado, diced

½ cup cherry tomatoes, halved

¼ cup fresh cilantro, chopped

¼ cup Greek yogurt or sour cream (for topping)

Lime wedges (for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Roast the Sweet Potatoes: In a large bowl, toss the diced sweet potatoes with 1 tablespoon of olive oil, smoked paprika, garlic powder, onion powder, salt, and pepper. Spread the sweet potatoes evenly on a baking sheet. Roast in the preheated oven for about 25-30 minutes, or until tender and slightly crispy, flipping halfway through for even cooking.

      Cook the Turkey: While the sweet potatoes are roasting, heat the remaining tablespoon of olive oil in a large skillet over medium heat. Add the ground turkey and cook for about 6-8 minutes, breaking it apart with a spatula until browned and cooked through. Stir in the cumin and adjust seasoning with salt and pepper to taste. Remove from heat.

        Add Beans and Corn: Stir the black beans and corn into the cooked turkey, allowing to warm through for another 2-3 minutes over low heat.

          Assemble the Bowls: Once the sweet potatoes are done, remove them from the oven. In serving bowls, layer the roasted sweet potatoes, turkey mixture, diced avocado, and halved cherry tomatoes.
