Sheet Pan Gnocchi with Mushrooms & Kale

1 lb (450g) store-bought gnocchi

8 oz (225g) cremini mushrooms, sliced

2 cups kale, stems removed and chopped

1 red bell pepper, diced

4 cloves garlic, minced

1/4 cup olive oil

1 tsp smoked paprika

1/2 tsp red pepper flakes (adjust to taste)

Salt and pepper to taste

1/2 cup grated Parmesan cheese (optional)

Fresh parsley, chopped for garnish (optional)

Lemon wedges for serving (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Baking Sheet: Line a large baking sheet with parchment paper to prevent sticking.

      Combine Ingredients: In a large mixing bowl, combine the gnocchi, sliced mushrooms, chopped kale, and diced red bell pepper. Add minced garlic, olive oil, smoked paprika, red pepper flakes, salt, and pepper. Toss everything together until the gnocchi and vegetables are evenly coated.

        Spread on Baking Sheet: Transfer the mixture onto the prepared baking sheet, spreading it out in a single layer to ensure even cooking.

          Roast in the Oven: Roast in the preheated oven for about 20-25 minutes, or until the gnocchi are golden brown and the vegetables are tender. Halfway through, give everything a gentle stir to promote even roasting.

            Add Cheese (Optional): If using Parmesan cheese, sprinkle it over the gnocchi and vegetables during the last 5 minutes of roasting.

              Serve: Once done, remove from the oven and let it cool for a few minutes. Garnish with fresh parsley and serve with lemon wedges for added brightness.
