1 lb large shrimp, peeled and deveined

2 cups fresh sweet corn (or frozen if not available)

1 medium onion, diced

2 cloves garlic, minced

2 medium potatoes, diced

4 cups vegetable or chicken broth

1 cup heavy cream

1 cup milk

2 tablespoons unsalted butter

1 teaspoon smoked paprika

1 teaspoon thyme

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Sauté Aromatics: In a large pot or Dutch oven, melt the butter over medium heat. Add the diced onion and cook until translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.

    Add Potatoes and Broth: Add the diced potatoes to the pot and stir for a minute. Pour in the vegetable or chicken broth, ensuring the potatoes are submerged. Bring to a boil, then reduce to a simmer. Cook until the potatoes are tender, about 10-12 minutes.

      Combine Corn and Seasonings: Stir in the sweet corn, smoked paprika, thyme, salt, and pepper. Let the mixture simmer for another 5 minutes.

        Add Cream and Shrimp: Stir in the heavy cream and milk, then gently fold in the shrimp. Cook until the shrimp turn pink and are cooked through, about 3-4 minutes. Be careful not to overcook the shrimp.

          Finishing Touches: Taste the chowder and adjust seasoning with more salt and pepper if needed. Allow the chowder to simmer on low heat for an additional 5 minutes to meld the flavors together.
