For the Tomato Soup:

1 tablespoon olive oil

1 medium onion, diced

2 cloves garlic, minced

1 carrot, grated

1 can (28 oz) crushed tomatoes

2 cups vegetable broth

1 teaspoon sugar (optional, to taste)

1 teaspoon dried basil

1 teaspoon dried oregano

Salt and pepper, to taste

½ cup heavy cream

Fresh basil leaves, for garnish

For the Grilled Cheese:

4 slices of bread (sourdough or whole grain recommended)

1 cup shredded cheese (cheddar or a blend of your favorites)

2 tablespoons butter

Instructions
 

Prepare the Soup:

    - In a large pot, heat the olive oil over medium heat.

      - Add the diced onion and sauté for about 5 minutes until softened and translucent.

        - Stir in the minced garlic and grated carrot, cooking for an additional 2 minutes until fragrant.

          - Pour in the crushed tomatoes and vegetable broth, stirring well to combine.

            - Add the sugar, basil, oregano, salt, and pepper. Bring the mixture to a simmer and let it cook for about 20 minutes, allowing the flavors to meld.

              Blend the Soup:

                - Once the soup has simmered, use an immersion blender to puree until smooth. If you don’t have an immersion blender, carefully transfer the soup in batches to a stand blender.

                  Make it Creamy:

                    - Return the smooth soup to the pot over low heat. Stir in the heavy cream and adjust seasoning to taste. If desired, add more herbs or a pinch of sugar for sweetness. Keep warm while you prepare the grilled cheese.

                      Grill the Cheese Sandwiches:

                        - In a skillet over medium heat, melt 1 tablespoon of butter.

                          - Place two slices of bread in the skillet. Top each slice with half of the shredded cheese, then cover with the remaining slices to create sandwiches.

                            - Grill for about 3-4 minutes, until the bottom is golden brown. Flip the sandwiches, adding the remaining butter to the pan if needed. Grill the other side until golden brown and the cheese melts, about 3-4 more minutes.

                              Serve:
