3 lbs beef chuck roast, cut into large chunks

4 dried guajillo chiles, seeds removed

4 dried ancho chiles, seeds removed

2 cups beef broth

1 medium onion, quartered

4 cloves garlic, minced

1 tablespoon ground cumin

1 tablespoon dried oregano

1 teaspoon smoked paprika

1 teaspoon ground cinnamon

1/2 teaspoon black pepper

1/2 teaspoon salt (or to taste)

2 bay leaves

2 tablespoons apple cider vinegar

Fresh cilantro, chopped (for garnish)

Onion, finely chopped (for garnish)

Lime wedges (for serving)

Corn tortillas (for serving)

Prepare the Chiles: In a dry skillet over medium heat, toast the guajillo and ancho chiles for about 2-3 minutes, stirring frequently until fragrant. Be careful not to burn them. Remove and soak them in hot water for 15-20 minutes until softened.

    Make the Sauce: In a blender, combine the soaked chiles, beef broth, quartered onion, minced garlic, ground cumin, oregano, smoked paprika, ground cinnamon, black pepper, salt, apple cider vinegar, and bay leaves. Blend until smooth, creating a rich sauce.

      Sear the Beef: (Optional but recommended) In a large skillet over medium-high heat, sear the beef chunks on all sides until browned. This step enhances the depth of flavor. Transfer the beef to the slow cooker.

        Combine in Slow Cooker: Pour the blended sauce over the beef in the slow cooker, ensuring all pieces are well-coated. Cover and set the slow cooker to low for 6-8 hours or high for 4-5 hours until the beef is fork-tender.
