200g spaghetti or fettuccine

150g smoked salmon, cut into strips

2 large eggs

100ml heavy cream

50g grated Parmesan cheese, plus extra for serving

1 clove garlic, minced

2 tablespoons olive oil

Salt and freshly ground black pepper, to taste

1 tablespoon capers (optional)

Fresh dill or chives, for garnish

Lemon wedges, for serving

Cook the Pasta: Boil a large pot of salted water. Add the spaghetti or fettuccine and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set it aside.

    Mix the Sauce: In a medium bowl, whisk together the eggs, heavy cream, and grated Parmesan cheese. Season with a generous pinch of salt and black pepper. Set aside.

      Sauté the Garlic: In a large skillet, heat olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute, being careful not to burn it.
