Southwest Chicken Lettuce Wraps

1 lb ground chicken

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 bell pepper, diced (any color)

1 cup frozen corn (thawed)

1 can (15 ounces) black beans, rinsed and drained

1 teaspoon chili powder

1 teaspoon cumin

½ teaspoon smoked paprika

Salt and pepper to taste

1 tablespoon lime juice

8-10 large Romaine or butter lettuce leaves

Toppings: diced avocado, diced tomatoes, shredded cheese, cilantro, and sour cream (optional)

Instructions
 

Prepare the Chicken Mixture: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until softened. Stir in the minced garlic and cook for an additional minute until fragrant.

    Brown the Chicken: Increase the heat to medium-high and add the ground chicken to the skillet. Cook, breaking it apart with a spatula, until browned and cooked through, about 5-7 minutes.

      Add Veggies and Spices: Stir in the diced bell pepper, thawed corn, black beans, chili powder, cumin, smoked paprika, salt, and pepper. Mix well to combine all ingredients and let them cook together for another 5 minutes, allowing the flavors to meld.
