150g pancetta, diced

4 large eggs

100g Pecorino Romano cheese, finely grated

50g Parmigiano-Reggiano cheese, finely grated

2 cloves garlic, minced

Freshly cracked black pepper

Salt, for pasta water

Fresh parsley, chopped (for garnish)

Cook the Spaghetti: In a large pot of salted boiling water, cook the spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.

    Prepare the Pancetta: While the pasta cooks, heat a large skillet over medium heat. Add the diced pancetta and cook until crispy, about 5-7 minutes. Remove the skillet from heat and allow it to cool slightly.

      Make the Egg Mixture: In a mixing bowl, whisk together the eggs, Pecorino Romano, and Parmigiano-Reggiano until fully combined. Add a generous amount of freshly cracked black pepper to taste.

        Combine It All: Once the spaghetti is cooked and drained, quickly add it to the skillet with the crispy pancetta (off the heat). Stir well so the spaghetti absorbs the pancetta flavor.
