Spaghetti with Roasted Garlic Butter

12 oz spaghetti

1 whole bulb of garlic

1/2 cup unsalted butter (1 stick)

1/4 cup extra virgin olive oil

1 teaspoon red pepper flakes (adjust to taste)

Salt, to taste

Freshly cracked black pepper, to taste

Zest of 1 lemon

Juice of 1/2 lemon

1/2 cup grated Parmesan cheese

1/4 cup fresh parsley, chopped

Optional: Additional cheese for serving

Roast the Garlic: Preheat your oven to 400°F (200°C). Slice the top off the whole bulb of garlic to expose the individual cloves. Drizzle with olive oil and wrap it in aluminum foil. Roast in the oven for about 30-35 minutes or until the cloves are soft and caramelized. Remove from the oven and let it cool slightly, then squeeze the soft garlic out of the skins into a bowl.

    Cook the Spaghetti: While the garlic is roasting, bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta cooking water, then drain the spaghetti and set aside.

      Make the Garlic Butter: In a large skillet over medium heat, melt the butter. Once it starts to foam, add the freshly roasted garlic puree and the red pepper flakes. Stir for about 2-3 minutes until fragrant, being cautious not to let the garlic brown.

        Combine Spaghetti and Sauce: Add the drained spaghetti to the skillet with the garlic butter. Toss to coat the noodles well. If the mixture seems too dry, gradually add some of the reserved pasta water until you reach your desired consistency.

          Finish the Dish: Stir in the lemon zest, lemon juice, Parmesan cheese, salt, and freshly cracked black pepper. Toss everything together until evenly mixed.
