1 lb ground chicken

1 tablespoon olive oil

3 cloves garlic, minced

1 inch fresh ginger, grated

1 red bell pepper, diced

1/2 cup mushrooms, finely chopped

1/4 cup green onions, thinly sliced

2 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon sriracha (adjust for heat)

1 tablespoon rice vinegar

1 tablespoon sesame oil

1 teaspoon honey (or maple syrup for vegan)

Salt and pepper to taste

1 head of butter lettuce or iceberg lettuce, leaves separated

Optional toppings: chopped cilantro, crushed peanuts, lime wedges

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Cook the Chicken: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and grated ginger, sautéing until fragrant (about 1 minute). Add the ground chicken, breaking it apart with a spatula. Cook until lightly browned, about 5-7 minutes.

      Add Vegetables: Stir in the diced red bell pepper and chopped mushrooms. Cook for another 3-4 minutes until the vegetables are tender.

        Mix the Sauce: In a small bowl, whisk together the soy sauce, sriracha, rice vinegar, sesame oil, and honey. Pour this sauce over the chicken and vegetable mixture, stirring well to combine. Season with salt and pepper to taste.

          Bake: Transfer the mixture to a baking dish and spread it out evenly. Bake in the preheated oven for about 15-20 minutes until everything is heated through and slightly crispy on top.
