Spicy Chili Nachos

Ingredients
  

1 bag of tortilla chips (about 12 oz)

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 can (15 oz) black beans, rinsed and drained

1 cup fresh or canned chili (spicy variety)

1 jalapeño, sliced (adjust to taste)

1 medium tomato, diced

1/2 small red onion, finely chopped

1/4 cup fresh cilantro, chopped

1 avocado, diced

1/2 cup sour cream

1 lime, cut into wedges

Salt and pepper to taste

Optional: 1/4 cup pickled jalapeños

Instructions
 

Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper for easy cleanup.

    Spread the tortilla chips evenly on the prepared baking sheet, making sure they overlap as little as possible.

      Combine the cheeses in a bowl—mix the cheddar and Monterey Jack cheese together. Set aside.

        Layer the nachos: Start with half the tortilla chips, then sprinkle with half of the cheese mixture. Next, evenly distribute the black beans, chili, jalapeño slices, diced tomato, and red onion. Top with the remaining chips and finish with the rest of the cheese.

          Bake the nachos in the preheated oven for about 15-20 minutes, or until the cheese is bubbly and golden.

            Remove from the oven and let cool for a couple of minutes. Then, add the diced avocado, fresh cilantro, and season with salt and pepper to taste.

              Dollop sour cream over the top and garnish with lime wedges on the side. If you like extra heat, add pickled jalapeños on top!
