Ingredients

2 medium cucumbers, thinly sliced

2 ripe mangoes, peeled and diced

1 red bell pepper, finely chopped

1 small red onion, finely sliced

1-2 small red chilies, minced (adjust based on spice preference)

2 tablespoons fresh lime juice

1 tablespoon honey or agave syrup

1 tablespoon fish sauce (optional for umami)

1/4 cup fresh cilantro, chopped

Salt and pepper to taste

1 tablespoon sesame seeds (for garnish)

Instructions

Prepare the Vegetables and Fruits: Start by washing the cucumbers and mangoes thoroughly. Slice the cucumbers thinly and dice the mangoes into bite-sized pieces. Set aside in a large mixing bowl.

Chop Additional Ingredients: Finely chop the red bell pepper and slice the red onion. Mince the red chilies, adjusting the amount to control the heat level. Add these to the mixing bowl with the cucumbers and mangoes.

Make the Dressing: In a small bowl, whisk together the lime juice, honey or agave syrup, and fish sauce (if using). Season with salt and pepper to taste. This will create a sweet, tangy, and spicy dressing that enhances the salad.

Combine Salad and Dressing: Pour the dressing over the cucumber, mango, and other vegetables. Toss gently to coat all ingredients evenly, ensuring the mangoes don’t get mushy.

Add Herbs: Fold the chopped cilantro into the salad, allowing its fresh flavor to meld with the rest of the ingredients.

Serve and Garnish: Let the salad sit for about 10 minutes to allow the flavors to develop. Before serving, sprinkle sesame seeds on top for an extra crunch.

Enjoy Your Creation: Serve the salad chilled or at room temperature as a refreshing side dish or a light meal!
