Ingredients

2 boneless, skinless chicken breasts

1 tablespoon olive oil

2 teaspoons smoked paprika

1 teaspoon cayenne pepper (adjust for spice preference)

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

4 pieces of flatbread (store-bought or homemade)

1 cup Greek yogurt

1 tablespoon lemon juice

1 tablespoon fresh cilantro, chopped

1 cup shredded lettuce

1 medium tomato, diced

½ red onion, thinly sliced

Crumbled feta cheese (optional for garnish)

Instructions

Marinate the Chicken: In a bowl, mix together olive oil, smoked paprika, cayenne pepper, garlic powder, onion powder, salt, and pepper. Add the chicken breasts, ensuring they are well-coated. Cover and let marinate for at least 30 minutes (or up to 2 hours) in the refrigerator for better flavor.

Prepare the Grill: Preheat your grill to medium-high heat. If you’re using a grill pan, preheat it over medium heat and lightly oil the surface.

Grill the Chicken: Remove the chicken from the marinade and place it on the hot grill. Cook for about 5-7 minutes on each side or until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F (75°C). Remove from the grill and let it rest for 5 minutes before slicing.

Mix the Yogurt Sauce: While the chicken is resting, mix together the Greek yogurt, lemon juice, and chopped cilantro in a small bowl. Season with salt and pepper to taste. This will be a refreshing sauce for your flatbread.

Assemble the Flatbread: Place the grilled chicken slices on the flatbread, followed by a generous smear of the yogurt sauce. Top with shredded lettuce, diced tomato, and sliced red onion.

Garnish and Serve: Sprinkle crumbled feta cheese on top if desired. Slice the flatbreads into manageable pieces and serve immediately while warm. Enjoy with a side of extra yogurt sauce for dipping!
